In 2016 we also added the laser thermometer to our shop.

The front thermometer is ideal for flameless cooking because it detects the temperature of the air inside the oven. For cooking pizza, the laser thermometer is recommended to measure the temperature of the baking surface.
Note: When the door is opened, the temperature shown on the front thermometer seems to decrease because the thermometer detects the outside temperature of the oven, whereas internally the temperature always remains high. In fact, as soon as the door is closed again, the thermometer rises quickly.

When you receive the oven in winter time

Get a propane gas cylinder or one with a high % propane. This type of gas performs best when using the oven in winter at temperatures below 10°C and allows for optimal operation and better efficiency. (Butane at low temperatures does not have excellent efficiency and has combustion difficulties, also causing an increase in consumption.)

If winter is particularly cold, 2 hours before use, we recommend keeping the gas cylinder to be used at a temperature of around 15°C. To check the gas level inside the cylinder during use, you can use this method

First heating

Make a moderate first heating for about 1h30min at about 200°C (400°F) to dry the floor.

LPG features and winter use

If you use the gas oven when the temperature is about 0°C (32°F), use an LPG gas cylinder with only propane, or a high % of propane, to keep the high calorific power at a low temperature. (Butane doesn't work great at low temperatures, and it increases consumption.)

How to use oven to cook neapolitan pizzas

Heat the oven at maximum heat for 40-45 minutes (+10min if using the Saputo biscotto).

In winter, we recommend extending the heating by 10 minutes on particularly cold days.

After heating the oven, our most experienced customers recommend keeping the knob at about three-quarters and then proceeding with cooking your pizzas at a temperature of about 400-430°C (750-850°F).

How to manage the cooking of classic pizza with the refractory hob:

Heat the oven at maximum heat for 30-35 minutes (+10 minutes if using the Saputo biscotto).
In winter, we recommend extending the heating by 10 minutes on particularly cold days.

After heating the oven, our most experienced customers recommend keeping the knob at about halfway between high and low flame, and then proceeding with cooking your pizzas at around 300°C (600°F).

If you want to cook two pizzas at the same time and avoid having to change the positions of your pizzas during cooking, bake on the right first as in this video. We recommend cooking one pizza at a time for the first few uses, to get to know the oven and its features.

Note: if the hob temperature is 400°C (750°F), the cooking chamber will be around +100°C (+200°F).

-Preparation Before First Use

Assemble the oven feet before using it. The oven must always be used with the feet installed to allow proper cooling of the display area. Using the oven without the feet will void the warranty in case of any issues. Remove the external protective film.

-Shutdown

When turning off the oven, it must not be unplugged from the power supply for at least 30 minutes to allow the fan to properly cool down the display area.
The fan will continue to operate at intervals until the temperature in the display area drops below the safety threshold.

-Possible Power On/Off Issues

The oven does not turn on: Check whether the plug is correctly inserted or press the reset button located at the back of the oven to reactivate the heating elements.
To reset the elements, unscrew the black cover and press the button.

The power supply's circuit breaker trips: Check that the socket the oven is connected to meets the required specifications indicated on the oven's rating plate. If in doubt, contact a qualified and competent electrician.
